Cinnamon Streusel Muffins (AIP, Paleo, & Vegan )

Introduction
I'm a big fan of cinnamon and the way it tastes in baked goods. When I was a kid, my mom always loved cinnamon rolls, especially the very middle of them. They were one of my favorite treats growing up. It wasn't until years later that I realized just how much sugar is in those rolls! That's why these cinnamon streusel muffins are such an awesome substitute. My favorite thing about making recipes like this is that you can still enjoy your favorite foods but in a healthy way.
Ingredients:
Cinnamon Crumb Topping · 2 TBSP of room temperature coconut oil · 2 TBSP coconut flour · 2 TBSP almond flour · 2 TBSP coconut sugar • 1/2 tsp pure vanilla extract · 1 tsp cinnamon · pinch of sea salt Muffins · 3/4 cup almond flour · 1/2 cup tapioca starch · 1/4 cup coconut flour · 1 tsp baking soda · 1/2 tsp sea salt · 1/2 tsp cinnamon · 1/4 cup + 2 TBSP melted coconut oil · 3/4 cup unsweetened applesauce · 1/2 cup additive free, full fat coconut milk* · 1 tsp pure vanilla extract · 1 gelatin egg Gelatin Egg · 1 TBSP gelatin · 1 TBSP apple cider vinegar · 2 TBSP hot water
Directions::
1. Preheat the oven to 350° and line a muffin pan with parchment liners. 2. Make cinnamon crumb topping by combining the coconut oil, coconut flour, almond flour, coconut sugar, vanilla extract, cinnamon, and sea salt in a small bowl. Once they are all in the bowl mix ingredients to clump together. 3. In a large bowl, combine almond flour, tapioca starch, coconut flour, baking soda, sea salt and cinnamon. 4. In a another bowl, combine the room temperature coconut oil, applesauce, full fat coconut milk and vanilla extract. 5. Make a hole in the center of the dry ingredients and add then pour the wet ingredients directly into it. 6. Make gelatin egg by combining gelatin, apple cider vinegar and hot water into a small bowl. Use a fork to whisk until gelatin is fully combined and mixture is frothy. 7. Add the gelatin egg into batter. 8. Pour the batter into muffin liners and top with cinnamon crumb topping. Gently press cinnamon topping into muffin so that it doesn’t completely crumble off. 9. Bake on middle rack for 27-30 minutes. 10. Remove muffins from oven and allow to cool before removing from pan.
